Roasted Sweet Potato & Black Bean Salad

I love sweet potatoes & black beans separately so when I tried a recipe on Pinterest last year, and fell in love, I decided to make it my own.

I started by turning the oven on to 410 degrees Fahrenheit.

Next I washed and peeled a 3 lb bag of sweet potatoes, then cutting them into 1/4 inch pieces. 

I put them on a baking sheet and drizzled olive oil on it. I seasoned them with salt & pepper, and moved them around so that they can be evenly seasoned. 

Next, I cut the red onion into 1/2 pieces as well and added it to the sweet potatoes.

I put them on a baking sheet and drizzled olive oil on it. I seasoned them with salt & pepper, and moved them around so that they can be evenly seasoned. 

The potatoes and onions roasted in the oven for about 35-45 minutes. 

Right before I took the baking sheet out of the oven, I put the can of black beans in a microwave safe bowl (covered) for 2 minutes.

I put them both in a bowl; the salad can be enjoyed hot or cold.
